Jerk is a technique of food preparation local to Jamaica in which meats are dry-rubbed or wet marinated with an extremely hot spice blend called Jamaican jerk spice. Jerk seasoning is customarily applied to pork and chicken but modern recipes also apply jerk spice mixes to fish, shrimp, shellfish, beef, and sausage. Jerk seasoning primarily relies upon two items: allspice (called “pimento” in Jamaica) and Scotch bonnet peppers. Other ingredients include cloves, cinnamon, scallions, nutmeg, thyme, garlic, salt, and pepper.
Jerk chicken was initially smoked over wood charcoal. Most jerk chicken in Jamaica and Toronto is no longer cooked in the traditional way and is grilled over hardwood charcoal in a steel drum jerk pan. The jerk pan, berries, and leaves of the allspice plant among the coals put in the jerk’s characteristic flavour.
